PRESIDENT Letter
As we enter into December, I am pleased to reflect on a month filled with culinary achievements and community engagement. Thank you all for your continued passion and dedication to our association.
We kicked off the month with our NVICA executive meeting, where we reviewed recent events and planned for upcoming opportunities. These gatherings are essential in shaping our collective goals, and your input is always invaluable.
A standout event last month was the “Back to Basics” cooking demo at the Comox Valley Farmers’ Market. With the help of NIC students Joseph and Curtis, along with Quinn from the Culinary Club at SD71, we showcased the art of braising and stewing to an eager audience. This demonstration highlighted the importance of using fresh, local ingredients while strengthening the connection between our culinary community and the public.
On November 19, we hosted a crucial mental health meeting at Gold Phoenix Asian Foods, focusing on mental health and wellness in our industry. This event provided a space for open dialogue and support, reinforcing our commitment to the well-being of our members.
November 28 marked the grand finale of the month with NIC Chef’s Night Out. The Professional Cook Level 2 students delivered an exceptional four-course dinner that impressed all attendees. This dinner also served as the final service for these students, making it a memorable occasion for both them and all involved.
We wrapped up the month with the Culinary Arts Foundation meeting, where Bruno G. Marti, CCC, was elected as the new chairperson. His expertise and leadership will undoubtedly guide the foundation to continued success and growth. Bruno is also set to visit us in the new year.
Looking ahead, we’re excited for the NIC Christmas Luncheon on December 12 in Campbell River. This event, featuring a festive menu crafted by my Professional Cook Level 1 students, will be a great way to close out the year and celebrate the holiday season.
In January, we will host our Winter Social at the Griffin Pub, with the date to be announced soon. This event will be a fantastic way to kick off the new year, and we’re also planning additional activities such as snowshoeing adventures to further connect and strengthen our community. Stay tuned for more details!
Thank you, as always, for your unwavering commitment to NVICA. Together, we are building a stronger, more unified culinary community, inspiring excellence across North Vancouver Island.
Warm regards,
Jonathan Frazier
